Open Faced Chicken Cordon Bleu
- 2 Chicken breasts
- 1/2 Tsp each salt and black pepper
- 1 Tsp Greek seasoning
- 1 Tbsp butter
- 2 Tsp Dijon mustard
- 4 Slices deli ham
- 4 Slices Swiss cheese
Preheat oven to 350°F. Pound chicken breast to flatten to 1/2" (Use a large freezer zip lock bag to keep the chicken from getting all over the place).
Season both sides with salt and pepper and Greek seasoning.
In a oven proof skillet over medium high heat add butter.
Quickly pan sear the chicken on both sides until lightly browned, about 1-2 minutes each side. Turn off heat and brush each piece of chicken with mustard. Top each piece of chicken with sliced ham and Swiss cheese. Bake for 15 minutes or until juices run clear.
