We are excited to partner with The Cheese School of San Francisco to bring you cheese pairings for The Perfect Match collection! The Cheese School is owned by Jeanine Egan, a former Cheese School employee who took over the day-to-day operations from its founder.

The Cheese School of San Francisco is the only institution of its kind that’s completely dedicated to the education and appreciation of all things cheese. Enthusiasts and professionals alike can enjoy a wide range of offerings such as: a cheese focused wine bar, tasting and pairing workshops, cheese making classes, farm tours, corporate team building events, special occasions and celebrations, weddings, private dining, catering, and much more.

Here are Jeanine’s selected cheese pairings for our latest collection: 


2021 Rosé with Mt. Alice 

Mt. Alice is an incredible camembert style cheese, handmade by Molly S Emler on the von Trapp Farmstead in Vermont. The von Trapps have been making delicious cheeses since 1959 and the land on which their rainbow herd of cows live and graze is certified organic, lovely, and lush. Mt. Alice is named after the highest peak closest to the farm. It is aged for 1 to 3 months and almost looks covered in Vermont snow with its fluffy, white rind. The Mt. Alice is the perfect match for the 2021 Rosé. The creaminess of the cheese will highlight the crisp acidity, floral aromas, and delicate fruity flavors of this pretty pink wine.

2020 Tempranillo with La Dama Sagrada

La Dama Sagrada is an exquisite, rare goat milk cheese from Castilla La Mancha, Spain. The name, meaning "sacred dame", is a tribute to the industrious woman who created this cheese, Fatima Navarro, who has been making artisan cheeses by hand for almost 25 years. As the cheese is aged 6 to 8 months, it develops a well rounded, sweet, and grassy flavor profile. The paste is firm and brittle with a pleasant crunch. The velvety texture and juicy flavors of the 2020 Fair Play Tempranillo pair beautifully with La Dama Sagrada. This classic Spanish varietal offers a lovely balance between earth and fruit which will play off of the upfront sweetness and slightly spicy finish of this cheese.

All In Zinfandel with Sagittarius

Sagittarius is a very special cheese made by a very special cheesemaker, Avery Jones from Shooting Star Creamery. Avery started making cheese alongside her father when she was seven years old, at their creamery in Paso Robles, California. In 2019, the first cheese she made on her own, Aries, took first place in its category and third place in the Best of Show category at the American Cheese Society Conference Awards...the Oscars of artisan cheese. 

At the age of fifteen, she beat out 1700 other cheeses and became the youngest cheesemaker ever to have placed that high in the competition. Her cheeses are all named for astrological signs and her creamery is called Shooting Star because her Dad always taught her to shoot for the stars. Avery donates a portion of her profits to different organizations that support her community, and hopes to inspire a younger generation to take up the art of making artisan cheese. 

Sagittarius is a unique gouda style cheese made from a blend of sheep and cow milk. Aged for about 3 months, it has a smooth, yet slightly crumbly texture with a rich, nutty flavor. The All In Zinfandel has notes of bright fruit and warm spices, which are a true taste sensation with the savory, slightly tangy Sagittarius. The smokey, chocolatey flavors in the wine compliment the sweet butterscotch flavors found in this opulent cheese.
